This is so good!! Makes you feel like you're cheating, but it's only 3 points per serving. And... it's a veggie too!!

baked pumpkin custard
points 3
servings 8

ingredients
1½ cups canned or mashed cooked pumpkin
1 can (12 oz) evaporated SKIM milk
1¾ cup fat free egg substitute
1/3 cup orange juice
1½ teaspoons vanilla extract
1/2 cup light brown sugar
1½ teaspoon pumpkin pie spice

place all ingredients in a blender until smooth.

coat a 2 quart suffle dish with non-stick cooking spray
pour the mixture into the dish
place the dish in a pan filled with 1" of hot water
bake at 350degrees for 1 hour and 15 minutes or until knife comes out clean
chill at least 8 hours or overnight.

That sounds really good, Madison. What do you bake it in if you don't have a souffle dish? I'm not sure if I do or not. D'oh! :confused: Why do you have to chill it after baking it? :o

I just use a casserole dish when I make it. If you chill it, it sets up better, I guess that's why. I suppose you could serve it hot though, if you like it that way. I've just always chilled it because the directions said so.
